I finally found some goat curry here in Wichita, but I'm curious how it compares to what you've had. I'm afraid what I had is the equivalent of gas station sushi.

I was a little leery of the place but I've been in some sketchy looking places that had great food.
When the food came out it looked like it was packed with meat. But when I started to eat, I realized that it was mostly bones with a little meat on them. What meat there was had a lot of fat and gristle. The curry itself was good, there just wasn't a lot of it.

I can see a family in a village somewhere making this to use up all of the meat from a goat.

This wasn't what I expected but maybe it's normal?

Wichita definitely does lean red but not as much as the rest of the state.

There is usually a lot of bones in curried goat in the restaurants here. The bones are said to add quite a bit of flavor to the curry. It's alright when you're having the buffet, you just get more and pick the meat out of it. And there are some nice chunks of meat mixed in too.

When I order off the menu I usually get lamb. For unknown reasons they don't cook curried lamb with a whole bunch of bones in it.

When we make curried goat at home I like to use goat leg. It's still really good and more meat without picking it off the bones.
