We used to have a little Mom & Pop greasy spoon hamburger joint in our town.
Their fries were the best in town, hands down. (IMNSHO, of course.)

A buddy of mine cooked there for a couple of years, and he said they never changed the oil in the deep fryer as long as he was there.
They would just strain the chunks out once in a while, and top it off when it got low.

He said he doesn't think they EVER completely changed the oil in that thing since the late 50's!  :rofl:

That reminds me of my most prized woodworking tool: Grampa's hammer.

I've changed the head a few times, and the handle too. Still the best one I have, thanks Grampa!

Memphis is pretty close to the half way point between New Orleans and Kansas city. I don't really like driving 13ish hours in one day any more so overnighting on the way there and back looks like a nice option. I'll have time to do a few things.

Dyer burgers sounds unique and interesting. Trying the local BBQ when traveling is always interesting too.

I've heard there are places you don't want to go also so I'll likely explore Beale street and not much more.

I've never been to Memphis, but there has got to be some good music clubs in that town.
