We did 17lbs of pork shoulder and two chickens yesterday on the smoker. We ended up with just under 1/2 left so I'll get to enjoy it for a while 😁

Asparagus, Brussel sprouts, broccoli, carrots, peppers, onions, garlic, and edamame sautéed on the Blackstone in a teriyaki Kung Pao sauce. Served over brown rice. Didn't snap a picture of the finished dish, but it was delicious. Have a bowl of leftover for lunch today.

That is what the edamame is for. We normally add edamame, chickpeas or some other lentils to add protein.

I like cattails. I used to forage quite a bit myself.

Ramps are also known as wild leeks, but they are closer related to garlic. In the spring they are one of the first green things to show. The leaf is broad and five to ten inches long. The root looks a bit like a wild onion but it is recommended to leave the root and only take the leaf as to keep the wild population stable. As to flavor they taste like a mild garlic/ onion cross. I've used them in quiche, soups, grilled or fried and lately I've been putting them in sandwiches.

Made a few smoked chicken quesadilla for dinner last night. Toasted the tortillas for a couple minutes on the Bullseye at 425, turned it down to 325. Spread a mixture of smoked, pulled chicken, cheese, green chilis, and taco seasoning on them. Topped mine with a few black olives. Grilled about 4 minutes per side until filling was hot. Didn't suck at all...

They look better than the ones that I get off of the taco truck down the street from my house.
