Bringing this back from the dead, you sorry bunch of no grillin MFers...

Ya know you're dedicated to grilling when you pack the Weber for a 7 hour road trip and cook opening day pheasant/quail stuffed, bacon wrapper jalepeno poppers, pheasant breast, and deer brats(those were in case we didn't kill no birds) in the Holiday Inn parking lot...





We had a grey Kansas DNR truck parked a few cars down from us. As we were cookin, and maybe drinkin, Saturday night, the fish cop walked out to his truck to get something. He must have smelled something cookin and wandered down to check us out. I was afraid he wouldn't appreciate the open beer cases and bottle of bourbon we had laying around. He asked, you guys tailgating or something? I was like, yes sir. Tailgating in honor of opening day of pheasant season. He was like, that's cool. He asked where we'd hunted, how we did, super nice guy.

Sunday afternoon as we were getting ready to walk another field, here comes a grey truck down the road. In the area we were hunting, vehicles were few and far between. And I remembered the color of that truck in our hotel parking lot. I was like, oh shit, here comes the DNR. Our guide said, get your licenses out, boys.

When the dude jumped out of the truck, he looked at me, the kid, and his buddies and said, oh look, it's the tailgaters. Now we were about 50 miles from the hotel at this point, so I was like, damn, small world man.

To make it even smaller, the fish cop and our guide went to college together about 10 years ago and hadn't seen each other since.

It's actually pretty mild on heat.
My wife can't handle heat but she loves this salt.

Saturday I smoked some beef cheeks. SPG rubbed, doubled up the smoke tubes, smoked at 200-250° until IT was 165°. Filled a foil pan with beef broth, some dark beer, an onion, and ton of minced garlic. Covered and braised cheeks until IT was 210°, and then held them there for a couple hours. Gotta break down all the collagen in them.

Last night I heated it up in a pot on the stove. Dunked corn tortillas in the juice and browned them. A little cheese, cilantro, jalapenos, and a squeeze of lime juice.

Best cabeza tacos EVER.

That does sound really good. I love some tacos de cabeza and lengua (tongue).

To make it even better try a toasted chile arbol salsa with it.

My previous favorite tacos de cabeza come from a local Messican joint. They steam whole cow's heads to make it.

Cheeks are about the most beefy tasting cut of beef there is.

Smoking them makes it even better.

Mexican cuisine is probably my favorite food (right there with hot wings).  I'm always attempting a more authentic mexican recipe at home.  I really like barbacoa, Al pastor, and fish tacos.  Up until the past year we ate the most 'whitest' (tex-mex) meals  :D
I love making a homemade Michelada with a Mexican dark lager.

Authentic Mexican is some of my favorite food also. If you're interested take a look at Authentic Mexican Recipes and Dishes

I really like cooking different kinds of meats in different kinds of chili and tomatillo salsas. My family and friends give great reviews on them too.

Some of my favorites; carne en su jugo, carne con chile rojo, carne con chile verde, and birria. Serve any of those with rice, either plain or green. Frijoles a la charra on the side.

For tacos I make my own Ranchera marinade for skirt steak, and a spicy arbol salsa that really makes a taco pop.

We did a taco bar for Christmas last year and I thought it was the best damn Christmas dinner I've ever had! :)

Wife is outta town, me, the boy kid, and my little brother ate some of the doves we harvested in the back pasture in the form of dove breast jalapeno poppers. Wrapped in bacon and lightly dusted with Meat Church Holy Voodoo...
