Healthy recipie thread - any interest in starting one?

I'd like to see some healthy recipes.  Not just the vegi versions YoDoug, but all healthy recipes.

I need to start trying to eat better and have run out of ideas.

It's either this, or we can start a new thread about our favorite Christopher Walken movies?

OK, I'll start. This is one of my wife's favorites. BBQ sweet potato street tacos. No cholesterol, no saturated fats, only a small amount of added sugars. Note; a carnivore could swap the sweet potatoes with favorite meat or just add some to the mix. Also, don't skip the pickled onions, they add a flavor dimension that isn't the same without.

1. Pickled onions. Finely chop 1/2 red onion and mix in a small container with lime zest, 2tbsp lime juice and 1tbsp sugar. Can be done when preparing the meal but we have found it is better if you can let it rest in the fridge for a day or so.

2. Cut sweet potatoes into thin wedges. Sprinkle BBQ seasoning (1 part brown sugar, 1 part chili powder, 1/2 part cumin, 1/4 part garlic powder) on wedges and bake for 15-30 minutes at 400, until tender with fork. The more even you cut the thickness, the better results you will have. If you want them crispier on the outside toss the wedges in corn starch/water mix before seasoning.

3. Warm up canned black beans in your favorite salsa. We like Willy's brand medium from our local grocery store.

4. Serve potatoes and bean/salsa mix on warm corn tortillas with cherry tomato wedges and pickled onions to taste.

To me a healthy recipe means pretty much no processed crap. Made from fresh ingredients, if you want to go organic that's even better. I don't like the hormones and antibiotics they put in many food animals.

Here's one of my favorites, it gets good reviews from everybody who tries it.

Carne en su Jugo~(Braised Beef in a Tomatillo Broth)
Ingredients
Olive oil
1 1/2 pounds skirt steak, sliced into 2 inch chunks
Salt
Pepper
Garlic powder
Cumin
Mexican oregano
1 1/2 pounds poached tomatillos
1/2 cup cilantro, chopped, plus more for garnish
1/2 cup onion, plus more for garnish
2 cloves garlic, sliced
2 serrano peppers (or jalapeño)
2 bay leaves
4 cups water or chicken broth
2 cups cooked pinto beans
1/3 cup sliced radishes, for garnish
Avocado slices for garnish
Warm corn tortillas
Directions
1. Preheat 3 tablespoons of olive oil to medium/high heat for a few minutes. Season the beef chunks with 1 teaspoon each of the spices listed. Sear the beef until good and browned on all sides.
2. While beef is searing, in the blender, combine the tomatillos, cilantro, onion, garlic, serranos, bay leaves, 2 cups of water or broth, and 1 teaspoon each of salt and pepper. Blend on high until smooth.
3. Add the sauce to the beef along with remaining 2 cups of water or broth. Bring to a boil, reduce heat to a simmer. At this time I like to re-season to taste with the spices listed. Cover and continue cooking for 1 hour or until beef is tender. I add in the beans about 20 minutes before serving or you can add some beans into the bottom of bowl, then ladle the beef and sauce over the top. Garnish as you like, with onions, cilantro, radishes and avocado. Serve with warm corn tortillas or over rice. Yields up to 6 servings.

Here's Johnny!

We have been eating oatmeal for breakfast over the last year or so.

1. Boil the water (2x water vs dry oats).
2. add cinnamon to the boiling water.
3. remove for the burner and add the dry oats (organic) and stir.
4. Cut up some blueberries, blackberries, raspberries and some apple.
5. Once the water has been adsorbed into the dry oats serve it up in bowl.
6. Add some Kind Cinnamon Oats granola (1/4 cup) and some Holy Crap cereal (natural).

Pro tip: Add some fruit and granola to the bowl before adding the oatmeal!!!

I like oatmeal but I don't eat it often. It is one of the foods that I notice my body has the most difficulty processing. I get heartburn immediately after eating it and often headaches.

also add tablespoon vanilla extract (the real stuff).
add chopped up bacon along with the blueberries.

A bag of Bob's organic oatmeal will usually last me two weeks.

This is a nice light salad for a side dish. Tasty, fast and easy.

Cherry Tomatoes and Olive Salad

2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1 teaspoon Italian dressing mix
1 pint cherry tomatoes, sliced in 1/2
1 (15-ounce) can pitted black olives cut in half
4 large fresh basil leaves, finely chopped
2 scallions, cut in 1/2-inch pieces

Directions
1. In a medium bowl whisk together olive oil, vinegar and dressing mix.
2. Add cherry tomatoes, olives, basil and sliced scallions to bowl. Toss to combine.

I grill a Flour Tortilla in Butter.
Slather it with refried beans.
add at least a 1/4 lb of ground Chuck.
add lettuce ,tomatoes,onions.
cover with sharp cheddar.
a dollop of sour cream, and two spoons of guacamole.
Lightly sprinkle with La Victoria Green sauce.

This is a family favorite. I usually omit the sausage and bacon, and I've added the peppers to make it a kind of customized Cajun soup.

Lentil Soup
Ingredients
•   1 1/4 cups dry brown lentils, soaked overnight and drained
•   2 slices bacon, chopped
•   1 tablespoon extra-virgin olive oil
•   1 onion, chopped
•   1 green bell pepper, chopped
•   1 clove garlic, minced
•   2 roma tomatoes, chopped
•   1 lb smoked sausage - chopped
•   1 bay leaf
•   2 cups water, or as needed
•   2 potatoes, peeled and cubed 
•   1 cup carrots – cubed
•   2 tablespoons salt
•   2 teaspoons white pepper
•   2 teaspoons red pepper
•   2 teaspoons black pepper
Directions
1.   Heat olive oil in a large pot over medium heat. Cook the bacon just until it starts to brown a bit, 5 to 8 minutes. Add the olive oil, onion, and bell pepper; cook and stir until vegetables begin to soften, about 5 minutes.
2.   Stir in the garlic, tomatoes, sausage, and bay leaf; cook about 4 minutes. Add lentils and water (water should be about an inch deeper than the level of the lentils). Bring to a boil over high heat. Reduce heat to low; simmer, uncovered, until lentils are just cooked, 15 to 20 minutes.
3.   Put the potatoes into the soup and continue simmering until potatoes are cooked through, 12 to 15 minutes.

Possibly you have a gluten allergy?
