I to love Siracha... But I've started making my own hot sauce.

Due to my high BP I decided to cut back on salt. Unfortunately hot sauce is loaded with salt and I have yet to find a low-sodium version. I started by cutting some store bought jalapenos and dropping them into a jar that I filled with cider vinegar. After a couple of weeks I would pour off the vinegar and put it into an old hot sauce bottle. It's good and hot but a bit thin so after several vinegar exchanges I ground up the peppers, added potassium chloride instead of salt and voila' hot sauce, not too salty but with a fresh character. I have a mix of peppers going now, including a couple of habanero's and I am growing hot peppers in the garden this year

funny , same here , I like to smoke them first then add all ingredients, peppers vinegar whole spices garlic onions and a pinch of salt then blend and pressure can for years of hot lovin :flame:

The little woman makes a pico that is a real butt hole burner and it's delicious. The thing that's great about sriracha, is that you can put it on just about anything. The pico, not so much. The pico is a lot healthier and I think that I could manage to live without sriracha for a bit if I have to using that pico as a crutch.

There are lots of low sodium hot sauces on the market.
What do you consider to be low sodium?
How much hot sauce do you consume for sodium to be a factor? lol Do you drink it?  :lol:
