You are locked into the odds when you place your bet. There are even markets where you can sell your bet, not unusual to see when you see crazy swings. My guess is that it is people working for whatever offshore betting site that is buying these long odds bets that turn short. They would rather pay out $50 than $500.

$2000 would win you $100. Some people make those bets in things like boxing or MMA...and sometimes lose.
FWIW...I only bet when I see a potential for a big gain, say +250 or more. There are stupid bets out there like Kanye West @ +99900 for winning the presidency. Political betting is fun for me, typically I dislike both candidates (like now) so betting on the races keeps me engaged.

I will take a 17 point win because that would be a big enough margin to overcome possible cheating.
