Quote from: RobertELee on December 03, 2023, 01:32 PMAsk any chef and most will cook a steak by coating it in olive oil. Olive oil has a lower smoke point, but it won't just go rancid while cooking with it.

Yup. EVO is good for marinades and dressings. I use it to make the marinade I put on my steaks. I'll rub down poultry with it before I roast it. I will not however fry with it....that low smoke point will leave you will a smoked out kitchen and burn. You can saute with it but you're generally doing that quickly over a moderate heat and then transitioning to something else.....

I don't deep fry much anymore but "if" I do....it's vegetable oil. When I do fry, I am usually making a parmigiana "something" and using coconut or peanut oils adds something to the flavoring I am not looking to add.

I do keep a jar of coconut oil for those rare occasions where I make coconut encrusted chicken tenders  :)

I slathered my turkey with olive oil to help with browning. It seemed to work.

There is a difference in the types of olive oil. I've made this mistake before.

from the web:
Extra virgin olive oil is usually stronger in flavor and darker in color than regular olive oil. While regular olive oil is excellent for cooking and frying, extra virgin olive oil has a lower smoke point and is best for non-heated applications so that its complex flavor can be properly appreciated.

I tried something different last night and would appreciate others input on flavors they like.

I marinated my vegetables last night with a balsamic vinaigrette to bring out a different flavor. I've always simply coated the vegies with an oil and then some seasoning then put them on a baking sheet. They would cook up just fine but often I'd have some crispy critters.

Last night I did the marinade and seasoning then put them on parchment paper. They cooked up much better, not as much burning or caramelizing. the flavor from the marinade was nice and clean.

I'm thinking about trying an Italian and then maybe a sun dried tomato.

Anyone have any other flavors they like? And yes steak is a flavor I like also =)

Like Doug has shared, I've been trying for the past several years to eat better. I do feel the difference when I eat more whole or unprocessed foods.

Once every week or two I'll make some sort of treat, usually cookies.
Made these last night:
https://sugarspunrun.com/fried-donut-holes-no-yeast/

One of the first times I ever fried anything. And I didn't have a metal slotted spoon so I used tongs. I kept dropping the darn donuts back into the pot and splashing oil all over the place... ended up with more oil on the stove than in the pot. Plus the first couple didn't cook thru. They did end up being pretty tasty tho.

Looks good, but fried donuts covered in sugar don't exactly meet the healthy recipe criteria.  ;)

^ I just read that Dr. Shawn Baker refuses every request to go on a show or podcast where there will be debating real doctors and scientists where he will have to actually scientifically defend his BS diet.

Is Dr Layne Norton a real doctor?

(And to note, this was just one of the first search responses I found. Haven't watched it, nor do I care to)

These guys really make a great point to go vegan....

He is a doctor that mostly agrees with the "you need tons of animal protein for gains" ideology. Norton is a supplement Co CEO or whatever his exact title is. His argument was not that Baker's diet is going to kill him, it's that in addition to all the meat you need to take his supplements to be healthy.

Baker will not debate real scientists or doctors with opposing views, only youtube influencers.

You can find dozens of "Doctors" and influencers on social media claiming all kinds of stuff about cholesterol. They say it particle size, etc. that make the difference. They cherry pick studies to make a convincing sounding case. However the one thing they can't do is rationally explain away the statistics related to atherosclerosis, heart disease, and LDL cholesterol. The truth is statistically, the higher your blood serum LDL, the higher rates of those diseases, and throw in type 2 diabetes as well. Not one single Carnivore doctor, gym bro influencer, Hot girl all meat diet influencer, meat industry propaganda film, etc can make any logical case to explain away the statistics.

I don't care about studies. All I know is I will never get the same sensory satisfaction from a vegetable that I do from a properly cooked piece of beef. If this picture does not make you salivate and make you want it, then you are either lying or dead.
