I really do take pride in trying many different foods when traveling but I'm not sure I could do the balut.

I trained up in the USMC on WW2 tech belt driven lathes and shapers.
The first CNC machine I saw was an Acroloc vertical mill
I wanted to run that sooo bad, but they wouldn't let me near it.
The first machine I ran was a Tree 2.5X mill, an NC controlled table with a manual spindle
like a Bridgeport. No CDC, programs were punched in by hand and it liked to run for home when
the air compressor went off.  Good Times !

I did a tremendous amount of work on a tracer lathe using templates way before we got CNC lathes. Most don't even know what I'm talking about.

I saw one of those on an episode of the Flintstone's one time. It was pretty cool.

I remember you especially liking goat curry. I stay on the look out for it but haven't found it around Wichita.

Well, DUH!!!

Really, though, we have a pretty vibrant food scene. A new Indian restaurant opened near my work that has good curry.

Wichita really does have a pretty cool downtown area and a very nice river front park. I can't imagine an Indian restaurant wouldn't have goat curry, or lamb curry. Those are staples.

Our favorite Indian restaurant is called Ruchi's, in Overland Park. I usually order lamb saag, which is lamb cooked in a spinach sauce, when I order off the menu. But Ruchi's also has a very good lunch buffet during the week, maybe on the weekend too, I'm not positive about that. They don't tone down the spices to accommodate the goreh (white people) like many places do so if you're comfortable with spicy food it's quite good. It's not crazy hot, the first bite might catch your attention, after that it just warms your mouth up nicely. I'd recommend it next time you're in the area.

I just checked their menu and they don't have goat. They have beef, chicken, pork, lamb, and fish and prawns. They ask what spice level you have, 1 to 5 (hottest). I kind of went by Thai food I've had and went with 4. It was hot but I actually think I could have gone with 5.

Several new Indian places have opened but they're on the opposite side of town and I haven't been out there in a while. I do remember seeing goat curry on one menu from an article I was reading.

IMO, the best restaurants in Wichita are ethnic and they can be found all over. Lots of Vietnamese/Chinese, some Thai and a surprising number of Lebanese and Mediterranean. Not to mention all of the Mexican and Central American restaurants. Some of the most influential members of the local food scene are a Lebanese family.
